Cold poached chicken and other morsels on bamboo skewers, steeped in a bowl of red chilli oil with Sichuan pepper, and paid for by the stick.
What makes it bobo chicken
Chicken poached and cooled, then sliced and threaded on skewers.
Steeped in chilli oil and eaten cold, the skewers standing in the bowl.
Counted by the stick — vegetables and offal skewered too.
Where it comes from
Bō is an earthenware bowl, and bōbō jī is cooked chicken, sliced and skewered and left to soak in one full of spiced chilli oil. It's one of Leshan's many snacks, and the skewers are counted at the end to make the bill.
The oil is the whole recipe: toasted, ground chillies steeped in hot oil with Sichuan pepper, sesame and a little sugar.
