A thick soup of red kidney beans with pork, nutmeg and clove, a Minahasan descendant of Dutch brown-bean soup.
What makes it brenebon
Red kidney beans, cooked soft.
Pork, usually on the bone.
Nutmeg and clove.
Where it comes from
The name comes from the Dutch bruine bonen, brown beans, and the soup from the Dutch kitchen; in Manado it took pork ribs or trotters, local shallots and a warm scent of nutmeg and clove, and kidney beans in place of Dutch brown beans.
It's eaten as a soup with rice and sambal, and sometimes ladled over tinutuan.
