Çılbır

Also Cilbir, Turkish eggs

Poached eggs on garlicky yoghurt, with butter foamed with red pepper poured over the top.

What makes it çılbır

  • Soft poached eggs.
  • Thick yoghurt beaten with garlic, at room temperature.
  • Butter foamed with pul biber or Aleppo pepper, poured over.

Where it comes from

An old dish — it's said to go back to the Ottoman palace kitchens — and a simple one: warm eggs, cool yoghurt, hot butter. It has found a second life abroad as a brunch dish, under the name Turkish eggs.
