Two small, honeyed pancakes sandwiched around sweet red bean paste.

Dorayaki

What makes it dorayaki

  • Pancakes made with egg and honey — soft, springy and dark gold.
  • Anko, sweet adzuki bean paste, in the middle.
  • Eaten in the hand.

Where it comes from

Dora means gong, which the pancakes are said to resemble. It's wagashi — a Japanese confection — but a homely one, sold in paper packets at stations and corner shops, and famously the favourite food of Doraemon, the robot cat of the manga.

How it varies

Tsubuan or koshian
Chunky or smooth bean paste — people take sides.
Mikasa
What it's often called in Kansai.
