Faloodeh

Also Faloodeh shirazi, Paloodeh

Fine starch noodles frozen in rose-water syrup to a crunchy, icy sorbet, sharpened with lime juice or sour cherry syrup.

What makes it faloodeh

  • Thin noodles of rice or wheat starch.
  • Sugar syrup with rose water, half-frozen and scraped.
  • Lime juice or sour cherry syrup on top.

Where it comes from

It's often called one of the oldest frozen desserts anywhere: in old Persia, winter ice was kept through the summer in great domed icehouses, yakhchals, and sweets like this were made with it. Shiraz is the city most known for it.

It's a summer thing, squeezed with lime at the table, and often eaten alongside saffron ice cream, bastani.
