Fattoush

A salad of crisp leaves, tomato, cucumber, radish and herbs with shards of toasted or fried flatbread, in a sharp dressing of lemon and sumac.

What makes it fattoush

  • Pieces of flatbread, toasted or fried until crisp.
  • Sumac in the dressing, and on top.
  • Whatever's fresh — tomato, cucumber, radish, lettuce, mint, parsley, purslane.

Where it comes from

The name comes from fatt, to crumble — the family of dishes built on broken bread, a thrifty way to use up yesterday's. It began as a country salad and became a mezze staple, with purslane in it when it's in season.
