Fleischschnacka
Also Fleischnacka, Meat snails
Fresh pasta spread with minced cooked beef, onion and herbs, rolled up, sliced into spirals like snails, and browned before simmering in stock.
What makes it fleischschnacka
- Fresh egg pasta rolled thin.
- Cooked beef minced with onion, parsley and egg.
- Rolled, sliced into spirals, browned and finished in broth.
Where it comes from
The name means meat snails, for the spiral slices. It was a way to use the boiled beef left from a pot-au-feu, and the broth that came with it.
It's a home dish more than a restaurant one, served with a green salad, and each family has its own seasoning.
No one here has made fleischschnacka yet. Start it as v1, and every version after is an experiment the next cook can learn from.
