Gajar ka halwa

Also Carrot halwa

Grated red carrots cooked slowly in milk until it's gone, then fried in ghee with sugar, cardamom and nuts.

What makes it gajar ka halwa

  • Red winter carrots, grated.
  • Milk reduced right down into them.
  • Ghee, sugar and cardamom, with almonds, cashews or pistachios.

Where it comes from

A Punjabi winter sweet, made when the long, deep-red carrots of the north are in season. It's an afternoon's stirring: the milk reduces into the carrots, then ghee and sugar go in and it fries until glossy.

It turns up at weddings and winter gatherings, usually warm, sometimes with khoya — milk cooked down to soft solids — crumbled through.
