Gatte ki sabzi

Also Gatte ka saag, Gatte ki kadhi

Dumplings of spiced gram flour, boiled and sliced, then simmered in a tangy yoghurt gravy.

What makes it gatte ki sabzi

  • Besan dumplings, boiled in logs and sliced.
  • A gravy of yoghurt with turmeric and red chilli.
  • Ajwain or fennel in the dough.

Where it comes from

A dish of the desert, where green vegetables were scarce and gram flour stood in for them. The flour is kneaded with yoghurt, ghee and spice, rolled into logs, boiled until firm and cut into rounds, and the cooking water often goes back into the gravy.

It's everyday Marwari food and a festival dish too, made without onion or garlic in many Jain and Marwari homes.

How it varies

Gatte ka pulao
The dumplings cooked into spiced rice.
Gatte ki kadhi
In a thinner, sourer kadhi of buttermilk and gram flour.
