Gogi guksu

Also Jeju pork noodle soup

Thick wheat noodles in a rich, cloudy pork-bone broth, under thick slices of boiled pork — Jeju's noodle soup, once made for feasts.

What makes it gogi guksu

  • Thick wheat noodles.
  • A cloudy pork-bone broth, lightly seasoned.
  • Thick slices of boiled pork on top, with spring onion and chilli flakes.

Where it comes from

Jeju raised pigs where the mainland raised cattle, and its cooking is built on pork. Gogi guksu — 'meat noodles' — is usually traced to the island's feasts, weddings and funerals, where a pig was boiled for the guests and its broth served with noodles.
