Har gow

Also Ha gow, Ha gau, Prawn dumplings

Prawns in a thin, translucent, pleated wrapper, steamed in a bamboo basket.

Har gow

What makes it har gow

  • A wrapper of wheat and tapioca starch, thin enough to see the prawn through.
  • Prawns, whole or chopped, with a little pork fat and bamboo shoot.
  • Pleated along one side — the more pleats, the better the hand.

Where it comes from

Dim sum grew up with yum cha — 'drinking tea' — in the teahouses of Guangzhou, and har gow is often traced to them in the early twentieth century. With siu mai it's the pair every dim sum table orders, and the one a dim sum chef is judged on.
