Red beans cooked soft, partly mashed, with coriander, garlic, spices and sometimes walnuts, often in a clay pot.
What makes it lobio
Red kidney beans, cooked soft and partly crushed.
A lot of fresh coriander.
Blue fenugreek and coriander seed; sometimes walnuts.
Where it comes from
Lobio means beans, and it's the everyday dish — cheap, filling, and meatless for the many fasting days of the Orthodox year. In the west it's served in a clay ketsi with cornbread and pickles alongside.
How it varies
Lobiani
The same beans baked inside bread, like khachapuri.
