Lomo saltado

Strips of beef stir-fried in a wok with onion, tomato, soy and vinegar, served with chips and rice.

Lomo saltado

What makes it lomo saltado

  • Beef, onion and tomato tossed fast over a very hot flame.
  • Soy sauce and vinegar in the pan.
  • Chips and white rice, both.

Where it comes from

It's the plainest proof of chifa: a Chinese stir-fry made with Peruvian beef, ají and potatoes. It comes to the table with both chips and rice — two starches on one plate, which says a lot about how the two kitchens met.

How it varies

Pollo saltado
Chicken instead of beef.
Tallarín saltado
The same toss with noodles instead of chips.
