Mango sticky rice

What makes it mango sticky rice

  • Glutinous rice, steamed, not boiled.
  • Coconut milk with sugar and salt — the salt matters.
  • Ripe, fragrant mango, with coconut cream on top and sometimes crisp mung beans.

Where it comes from

Sticky rice is the everyday rice of the north and north-east; as a sweet, it's steamed, then left to drink in warm coconut milk with sugar and a good pinch of salt. It's best in the hot months when the mangoes ripen, around Songkran, the Thai new year in April.
