Rice cooked in ghee and milk with saffron, sugar, cinnamon and cardamom, studded with dried fruit and nuts.
What makes it modur pulav
Saffron — plenty of it.
Sugar, ghee and whole spice cooked into the rice.
Dried fruit and nuts.
Where it comes from
A sweet rice for weddings and festivals, golden with saffron — modur means sweet in Kashmiri. The rice is fried in ghee with whole spice, cooked in water and milk and sweetened, and raisins, almonds and cashews are folded through.
It's eaten alongside the meat of a feast rather than only after it, and Muslim and Pandit families alike make it for celebrations.
