Hard, boat-shaped biscuits scented with orange-flower water, dunked in coffee.
What makes it navettes
Shaped like a small boat, with a slit along the top.
Orange-flower water.
Hard and dry, made for dunking.
Where it comes from
Navette means a little boat. They're tied to Candlemas in February and the Abbey of Saint-Victor in Marseille, and the shape is said to recall the boat that, in Provençal legend, brought the Saints Mary ashore.
They're dry and firm on purpose — made to last in a tin and to be softened in a bowl of coffee in the morning.
