Red beans and rice

Red kidney beans cooked for hours with a ham bone, smoked sausage and the trinity until creamy, over rice.

What makes it red beans and rice

  • Small red kidney beans, cooked until some break down and turn creamy.
  • A ham hock or bone, and smoked sausage.
  • The trinity, bay and thyme.

Where it comes from

It's the Monday dish of New Orleans. The story goes that Monday was washing day, so a pot of beans went on with Sunday's ham bone and was left to cook while the laundry was done. Plenty of restaurants still serve it only on Mondays.
