Where it comes from
Bogor's soto is a noodle soup, sold from carts across the town and the Jakarta suburbs. The broth is clear and savoury; the bowl holds yellow noodles, beef (and often tripe), cabbage, tomato and potato.
Its oddity is the risoles, a crêpe rolled around vegetables and fried, sliced into the bowl — a reminder of the Dutch kitchen. Kecap manis, sambal and lime finish it.
