Suya

Also Tsire, Yaji

Thin beef skewers coated in yaji — ground groundnut cake, chilli and spice — and grilled over open coals.

What makes it suya

  • Beef sliced thin across the grain.
  • Yaji spice, built on kuli kuli.
  • Grilled over open coals.

Where it comes from

Suya comes from the Hausa of northern Nigeria and is sold at night by the mai suya at roadside grills, wrapped in newspaper with raw onion, tomato and extra yaji.

The spice is the dish. Yaji is built on kuli kuli, groundnut paste pressed and fried until crisp, then ground with chilli, ginger and stock seasoning.
