Knowing it

Where to buy
Make it, with a honey you like — its flavour comes through.
Worth knowing
1:1 by weight with warm, not boiling, water. It's about 40% sugar — a little less sweet than simple syrup — so use a touch more. Strong honeys (buckwheat, chestnut) suit whisky; mild ones suit gin.
