Soda water
Water carbonated under pressure, sometimes with a little mineral salt added — length and lift for highballs and Collinses.
fizzy · clean · faintly mineral
Knowing it
- Where to buy
- Small bottles or cans, so each is opened cold and used fresh; a big bottle goes flat after the first pour. The fizziest mineral waters hold up best.
- Worth knowing
- Cold liquid holds gas: chill the spirit, the glass and the soda. To carbonate your own drinks, a carbonation cap on a PET bottle and a CO2 tank beats a soda siphon: chill the drink to near freezing, squeeze out the air, charge to 30–45 psi and shake. Clear drinks carbonate cleanly; cloudy ones foam.
