Village salad: ripe tomato, cucumber, onion, green pepper and olives, with a slab of feta, oregano and plenty of olive oil — and no lettuce.
What makes it horiatiki
Tomato, cucumber, red onion, green pepper and olives, in big pieces.
Feta in one slab, not crumbled.
Olive oil and oregano; vinegar only a little, if at all.
Where it comes from
Horiatiki means village salad. It's a summer dish, only as good as its tomatoes, and it's thought to have become a taverna standard in the twentieth century as visitors arrived. Bread is torn and dipped in the juices left at the bottom.
