Lohikeitto

Also Finnish salmon soup, Laxsoppa

A creamy Finnish soup of salmon, potatoes and leek in a light stock, with plenty of dill and whole allspice.

What makes it lohikeitto

  • Salmon in chunks, added last so it barely cooks.
  • Potatoes and leek in a light stock.
  • Cream, whole allspice, and dill by the handful.

Where it comes from

It's everyday food across Finland, in homes, workplace canteens and the market halls of Helsinki, eaten with rye bread and butter. It's simple on purpose: salmon, potato, leek, cream and dill, and the allspice that turns up in so much Finnish cooking.

Some cooks make it clear, with no cream at all; the creamy version is now the one most people know.

How it varies

Kirkas lohikeitto
'Clear' — without cream.
