Red onion sliced thin and soaked, dressed with lime, ají, coriander and salt.
What makes it salsa criolla
Red onion, sliced into thin half-moons.
Lime juice and salt.
Ají and coriander.
Where it comes from
Not a sauce so much as a relish, and on the table at nearly every meal: on anticuchos, in pan con chicharrón, beside rice and beans. Soaking the onion in cold water first takes away the harshness and leaves it crisp.
