Sate lilit

Minced fish or pork mixed with grated coconut, base genep and lime leaf, pressed around lemongrass or flat bamboo and grilled.

What makes it sate lilit

  • A spiced mince wrapped round the stick, not cubes threaded on.
  • Grated coconut in the mix.
  • Base genep and lime leaf.

Where it comes from

Lilit means to wrap or wind: rather than threading pieces, a sticky mince is squeezed onto the stick. The coconut keeps it moist and slightly sweet as it grills, and lemongrass stalks, where used, scent it from inside.

It's on ceremonial offerings and on every nasi campur, made with mackerel or tuna on the coast and with pork or chicken inland.
