Satsivi
Poached poultry in a thick sauce of ground walnuts, garlic and spices, served cold.
What makes it satsivi
- A walnut sauce thinned with the poaching broth.
- Blue fenugreek, coriander and marigold for colour and warmth.
- Eaten cold.
Where it comes from
The name comes from the word for cold. It's a festive dish, most of all at New Year, made with turkey or chicken and left to set in its sauce.
No one here has made satsivi yet. Start it as v1, and every version after is an experiment the next cook can learn from.
