What makes it smoorsnoek
Salted or smoked snoek, flaked from the bone.
Onion, potato and tomato cooked down with chilli.
Served with rice and apricot jam.
Where it comes from
Snoek, a long, bony fish of the Cape's cold waters, has fed the coast for centuries, and salting and smoking it kept it through the year. Smoor means to braise or smother, and smoorsnoek is everyday cooking — quick, cheap and salty, softened by rice and a spoonful of jam on the side.
