Cooked on a trompo, the vertical spit.

Where it comes from
A child of immigration. Lebanese families who settled in Puebla in the early twentieth century brought the vertical spit of shawarma; Mexican cooks swapped lamb for pork, marinated it in guajillo chillies and achiote, and crowned it with pineapple.
The name means 'shepherd-style', a nod to its lamb ancestor. Tacos árabes, closer to the original, are still made in Puebla.
