Where it comes from
Normandy has countless apple varieties, bred for eating, cooking and the cider press, and every house has an apple tart. What makes this one Norman is the custard of cream and eggs poured round the fruit.
Recipes differ on the details — sliced or chopped apples, almonds or none, a crumble on top or not — but the cream and the Calvados are generally agreed.
How it varies
With almonds
Ground almonds in the custard, closer to a frangipane.
