Sugar: 9.1 g / 100 ml
Acid: 0.59 %

Built over ice, the water depends on the ice and the wait — these are the numbers before it.

Beside an old fashioned: 60ml bourbon · 7.5ml rich simple syrup · 2 dashes angostura bitters, made the same way.

Method

Mix the mezcal, pineapple, lime, syrup and tea
