Knowing it

Where to buy
Specialist greengrocers and online, fresh or frozen; frozen pearls keep their pop well. Firm, unwrinkled fruit — the pearls can be green, pink or red.
Worth knowing
Cut it in half across and squeeze from the tip towards the cut end so the pearls slide out whole. Spoon them on at the last moment, over oysters, crudo or a seared scallop; heat bursts them.
