Knowing it
- Where to buy
- Modernist suppliers, in small bottles. Keep it in the fridge.
- Worth knowing
- A common dose is 0.2% of the juice's weight (2g per litre). Stir it in and wait 15 minutes at room temperature, then centrifuge — or, without a centrifuge, leave it in the fridge overnight and siphon the clear juice off the settled solids. Heat kills it, so add it to cool juice.
