Ripe avocado crushed with lime, onion, green chilli, coriander and salt — rough, fresh and made just before eating.
What makes it guacamole
Ripe avocado, crushed rough, not puréed.
Lime, onion, green chilli, coriander and salt.
Made fresh — it browns and dulls as it sits.
Where it comes from
The avocado is native to Mexico, and the name comes from the Nahuatl āhuacamōlli — avocado sauce. It's traditionally pounded in a molcajete, the same stone mortar used for salsas.
