Cachaça
Brazil's sugar cane spirit, distilled from fermented fresh cane juice — grassy and fruity like agricole but its own thing; many are rested in native Brazilian woods instead of oak.

- Where to buy
- Artisanal pot-still (alambique) cachaça tastes far more of cane than industrial column-still bottles.
- Worth knowing
- For a caipirinha, cut the white core out of the lime, then muddle the wedges with sugar — pressing the oil from the peel as well as the juice. Crushed ice, not cubes.
