The small, near-black berries that follow the flowers — tart, earthy and inky, for cordial, jelly, sauces for game and the old English pontack sauce.

Knowing it
- Where to buy
- Foraged: cut whole heads when the berries are fully dark and the heads droop.
- Worth knowing
- Always cook them: raw berries, unripe green ones and the stalks can make you ill. Strip every berry off its stalk with a fork first.
