Halloumi
Cypriot brined cheese, traditionally of sheep's and goat's milk, often with dried mint. It squeaks and won't melt, so it can be grilled or fried.

- Anywhere; Cypriot and Greek delis for the sheep and goat's milk kind. Much is made partly with cow's milk.
- Worth knowing
- Pat it dry and fry it in a hot pan with no oil until golden, then eat it straight away — it turns rubbery as it cools.
