Knowing it

Where to buy
Cheese shops and Dutch delis; look for 'oud' or 'overjarig' on the label.
Worth knowing
Grate it fine, like parmesan, over vegetables, eggs or soup, where its sweetness reads as caramel. Very old Gouda doesn't melt smoothly.
