Knowing it
- Where to buy
- Foraged from hedgerows. Dried hips and powder from Nordic and Eastern European shops, for Swedish nyponsoppa.
- A little history
- In Britain in the Second World War, children were paid to gather rosehips for a vitamin C syrup.
- Worth knowing
- The hairs inside are an irritant: cook the hips, then strain the juice through a jelly bag or doubled muslin before it goes near a syrup or sauce.
