Smoked salt
Salt cold-smoked over wood — oak, alder, hickory, applewood — until it tastes of a campfire. A way to get smoke into a dish without a smoker.

Knowing it
- Where to buy
- Delis and good grocers. Check the label: real smoked salt is smoked, not sprayed with liquid smoke.
- Worth knowing
- Finish with it rather than cook with it; long cooking fades the smoke. Use it in place of some of the ordinary salt — on eggs, tomatoes, potatoes, caramel.
