Knowing it

Where to buy
Foraged from shady woods, or from growers who supply restaurants. It wilts within hours of picking.
Worth knowing
Use it raw, at the very end — heat kills it. Like sorrel it's high in oxalic acid, so treat it as a seasoning leaf rather than a salad.
