Knowing it

Where to buy
Treat it like white wine: buy it fresh (look for a bottling date), serve it cold, finish it within a few days of opening. En rama bottlings are unfiltered and fuller.
Worth knowing
Use it for dry vermouth in a martini, or as the base of a low-alcohol sherry cobbler with sugar, orange and crushed ice. In the kitchen, a splash finishes a pan sauce for fish or mushrooms.
