Amontillado
Sherry that starts under flor like a fino, then ages on with air once the flor is gone — amber and dry, tasting of hazelnuts and toffee without the sugar.
Look for 'seco' or 'dry'; some commercial bottles labelled medium are sweetened.
Worth knowing
A bridge between spirit and vermouth: half amontillado, half rye or cognac, stirred with a dash of bitters. Once opened, it keeps a few weeks in the fridge.
