Blanc vermouth
Clear, sweet vermouth — blanc or bianco — sweeter than dry, softer and more floral than red. The style is usually credited to Chambéry in the Alps.
floral · sweet · vanilla
Knowing it
- Where to buy
- French blanc is lighter and more delicate; Italian bianco is sweeter, with more vanilla.
- Worth knowing
- Use it where a recipe wants dry vermouth and a touch of sugar both. As a low-alcohol highball: 60ml over ice with tonic and a strip of grapefruit peel. Fridge once opened.
