Knowing it

Where to buy
Dry oloroso, not 'cream' sherry, which is oloroso sweetened with PX.
Worth knowing
Use 10–15ml in a stirred whisky drink for depth, or rinse the glass with it. The sturdiest of the dry sherries once open — weeks in the fridge.
