Knowing it

Where to buy
African grocers. Look for certified sustainable sources where you can.
A little history
The oil palm is native to West Africa. Most is now grown in Indonesia and Malaysia, where plantations have cleared vast areas of rainforest.
Worth knowing
For some dishes, such as ofada stew, the oil is 'bleached' — heated until the red fades — with the windows open. Otherwise, heat it gently.
