Knowing it

Where to buy
Farmers' markets in spring. Patches take years to recover, so buy from foragers who cut a leaf per plant rather than digging the bulbs.
Worth knowing
The leaves cook in seconds and the bulbs in a few minutes, so split them and start the bulbs first. Pickle the bulbs and blitz the leaves into butter or salt to keep the season.
