Knowing it

Where to buy
Greengrocers in January. They freeze whole, so marmalade can wait.
A little history
Most of Seville's crop is shipped to Britain for marmalade. In Yucatán the bitter orange, naranja agria, is the juice in cochinita pibil.
Worth knowing
No Seville oranges? Two parts orange juice to one part lime is the usual stand-in.
